Does this come with Rod Ends?

No, does not come with RodEnds.
Once you select your range please use the datasheet link and scroll down to see the rod ends:
They will start with REC-XXX

Does the LCCD-50 model have threaded holes at the ends, or is there a different model that allows for threaded ends?

What is the end cable type? Is there something that can be purchased that allows for easy connection to a NI DAQ machine?

The end of the cable is stripped leads. You can purchase converters that change the milli volt signal to a usb,voltage or current.
