Used with sub ambient cannister sampling.
This worked well for our application of sub ambient cannister sampling. From -30 inHg to -6 inHg for record keeping.

I'm connecting the wires to my own serial connector. What are the assignments of the white, green and red cables? I'm assuming green is data, red is +VDC and white is GND. Is that correct?
Wiring would be as follows. Red is + Input Power, Green is + Output Signal, White is Common (- Input & - Signal).

Are the Model PX615-30V15GI Class I Div. 2 compliant? If not, is there a similar Omega sensor that is?
The PX605/615 Series Pressure Transmitters are not Class I Div 2 Compliant. The PX835-015CGI Intrinsically Safe Pressure Transmitter would meet you requirements.

Can I get the data from this sensor into my computer? Do you have any built-in application for this purpose or do I have to use the Data Acquisition Card to log the output voltage? If the later is true then tell me the conversion equation?
You will need to use Data Acquisition card. The out is a linear 1 to 5VDC over the sensors calibrated pressure range. You can use the linear equation y=mx+b
